When you say they start early, if the pig is big enough it'll be the day prior. Most are about 50-60 pounds. Damn, the good times down south!!

Even the salt shaker or ketchup bottle will buy you enough distraction to get your hardware out and positioned. If the threat is within distance, dinner forks, knives, trays, anything that will surprise or slow the threat is an advantage. If that threat ever had a weapon, they would be neutralized at the first possible time. I came to eat and go home, not be carried out.

 

Those are feral hogs and like the ones here, they are greasy as hell and take about 3 days in the ground to get the interior cooked. Even splayed open like a an RLC girl, they took a long time. Cuban style, @SPYING 1 knows. Cuban pig roasts are some of the best parties you will ever go to. Or, used to be. Times change. 

My buddy is from Texas and used to bring smoked wild hog back that his BIL had cook up. That was some fine dinning
