It's the present participle of the word 'sook', which is an alternate spelling of the word 'souk', which is a Middle Eastern or African open-air market. 'Sook' could also mean the mature female Chesapeake Bay blue crab, which is found along parts of the US Eastern Shore. But, more in your neck of the woods, it's also Scottish for cow, although rare.
