Personally I prefer flounder fillets for frying but will substitute haddock if I can catch it. Salmon baked is perfection, but the best for frying in the cast iron by far is CATFISH. I can make a mess of catfish and hushpuppies in less than 30 minutes that will make you lick your brains out. (sorry, Southern term). Uh oh, I might get in trouble by the 'fish police' for posting about seafood again! To keep this post pertinent, our girls love their sushi, which I can't stand.
